2 Tbsp reserved pasta water
¼ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) (to taste)
⅛ tsp freshly ground black pepper (to taste)
For Serving
Parmigiano-Reggiano (Parmesan) cheese (shaved/grated)
shiso leaves (perilla/ooba) (garnish)
