I'm not obsessed with Kimchi

150g ripe Kimchi
2 medium sized tomatoes
fresh basil leaves
a handful of pine nuts
black pepper
2 tbsp olive oil
1 fresh garlic
1 fresh baguette or bread of your choice

1) Cut the kimchi into small, bite-size pieces.

2) Heat oil in a pan over medium-high heat. Stir-fry the chopped kimchi for 3-5 minutes until transluscent. Remove from heat and let it cool in a bowl.

3) Meanwhile, dice the tomatoes into small cubes.

4) Add the diced tomatoes to the cooled kimchi and mix well.

5) Add pine nuts, black pepper and olive oil to the bowl and mix.

6) Cut a fresh baguette into slices and toast both sides in a pan.

7) Rub a garlic clove on both sides of the toasted baguette slices.

8) Top with kimchi-tomato-nut mix and with basil leaves.
